CSA 2014: Weeks 8 & 9*

Vietnamese Noodle Salad

Week 8 Included:

Carrots
Basil
Cucumbers
Squash
Garlic
Roma Green Beans
Fennel


And Week 9 Included:
Squash
Green Beans
Cucumbers
Scallions
Carrots
Potatoes

And here's what we made with our weeks' harvests...

Vietnamese Noodle Dinner Salads
Tossed julienned Cucumbers, Carrots, red cabbage and chopped mint, Cilantro (from last week), chives, Basil and shrimp (sautéed with Garlic, sesame oil and crushed red pepper) + green peas with Pad Thai rice noodles in a light lime, fish sauce and Sriracha sauce. Topped with toasted cashews.

BBQ Slaw
Chopped red and green cabbage, Carrots and Scallions tossed lime juice, homemade barbecue seasoning and a spoonful of homemade barbecue sauce.

(Gluten Free) Sausage & Mushroom Pizzas
Topped gluten free pizza crusts with roasted Garlic, browned local Mountain Valley Farm Hot Sausage, caramelized Onions (from last week), mushrooms (sautéed in butter and Garlic), shaved Fennel and grated fresh Parmesan.

Asian Lunch Salads & Thai Peanut Dressing
Tossed shredded kale, romaine, cabbage and Carrots with chopped Cucumbers, Scallions, Basil, Cilantro (from last week) with quick and easy thin rice noodles in a homemade peanut dressing.

Many a Stir Fry and Salad
See Week 3 and Week 5 for stir fry and salad ideas and variations.

Another Pot of Beans & Potatoes

Zucchini "Noodle" Salad
Combined ribbons of Zucchini (sliced into "noodles" with vegetable peeler), Basil and Scallions with shaved Fennel and dressed with oil and vinegar, topped with feta.

Vegetable Hummus Wraps
Shmeared hummus on gluten free tortillas, topped with strips of Carrots, Cucumbers, Scallions and Basil + baby kale and folded into wraps.

Roasted Pattypan Squash
Tossed rough-chunked Pattypan Squash, sliced Vidalia onions, Fennel and Garlic with olive oil, salt, pepper and roasted in oven.

Thai Larb
Browned local Mountain Valley Farm Ground Pork in sesame oil with Onion (from last week), ginger and Garlic and dressed with lime zest, lime juice and fish sauce. Stuffed fresh cabbage leaves with minced pork, strips of Carrots, Cucumbers, Onions, Basil, mint and cilantro.

Loaded Baked Potatoes
Went old-school with perfectly roasted whole Potatoes split open and loaded with sautéed chopped mushrooms, Garlic, Scallions, Fennel and salt, pepper and butter (also from Mountain Valley Farm).

Spicy Garlic Green Beans
Stir-fried Roma Green Beans with Garlic and dressed in a sauce of rice vinegar, sesame oil, water, Sriracha and a quick hit of maple syrup.
