And because these little gems are flourless, they're especially satisfying and satiating giving us more with less. Peanut butter is also a source of protein, vitamins, minerals, mono-saturated fats and some fiber. It's naturally cholesterol-free and by using egg whites so is this recipe. We tried soooo many recipes before hitting on these gluten free peanut butter cookies that actually satisfy the homemade cookie craving! More sugar than desired, but we experiment in cutting that back -- have found we can go to 2/3 cup before it starts tasting like a peanut butter biscuit, which is ok with tea for breakfast, but not at all what ya want in a cookie!
These cookies are soft while warm, and crips when cooled, but using 1 eggs makes them even
