Gluten Free Peanut Butter Cookies!


Gluten free peanut butter cookies served up our first glimmer of hope that good, homemade gluten free cookies were indeed possible and without becoming a chemist in the kitchen. Peanut butter -- the kind made with only peanuts and salt -- stands in beautifully for the flour that typically gives a cookie its cookie texture. And because these little gems are flourless, they're especially satisfying and satiating giving us more with less. Peanut butter is also a source of protein, vitamins, minerals, mono-saturated fats and some fiber. It's naturally cholesterol-free and by using egg whites so is this recipe. Beyond great gluten free peanut butter cookies, remember peanut butter and nut butters for gluten free alternatives for flour and thickeners in other recipes too -- like sauces, dressings and smoothies.

Ok...next to a big hulking piece of crusty baguette, Cuban sandwiches and beignets -- it's the loss of ooey-gooey, crisp on the outside, homemade cookies that trips me up on my "oh, I can so do this gluten free thing" journey!

We tried soooo many recipes before hitting on these gluten free peanut butter cookies that actually satisfy the homemade cookie craving! More sugar than desired, but we experiment in cutting that back -- have found we can go to 2/3 cup before it starts tasting like a peanut butter biscuit, which is ok with tea for breakfast, but not at all what ya want in a cookie!

These cookies are soft while warm, and crips when cooled, but using 1 eggs makes them even
crisper -- either way they're deeelicious for any kind of cookie but most especially for gluten free cookies. Try these

Gluten Free Chocolate Chip Peanut Butter Cookies from Scratch, Really!

Ingredients
1 cup organic sugar 
1 teaspoon baking powder
2 teaspoons pure vanilla extract
2 organic eggs
Mavenjoy Note: 1 egg yields a less cakey cookie ~
1 cup creamy organic peanut butter 
1 cup fair trade semi-sweet chocolate chips

1/2 cup chopped nuts

Preparation
Preheat oven to 350.
In large mixing bowl, combine sugar, baking powder, vanilla, and eggs. Whisk vigorously until well combined. Stir in peanut butter, chocolate chips and nuts just until combined. Spoon dough onto cookie sheet and bake 13-15 minutes*, remove from oven, remove from pan, turn upside down on a plate and enjoy.
Makes approximately 24 cookies

*Mavenjoy Tip: Probably one of THE most challenging issues facing gluten free chefs is mastering the cooking time and even the rest time with gluten free baking recipes. Soooo...on your inaugural batch, start testing a cookie from 13 minutes on until preferred crispness. We find that flipping the cookie over as they cool works best, but you can also remove from tray and rest them on a rack. If they're hard to remove from the pan, i.e. they crumble or mush on you then they're probably not ready. Whatever it takes for homemade hot out of the oven (gluten free!) cookies, right?!
