Healthy dessert recipes are absolutely doable and still delicious, even decadent. As with all foods, it's all in the ingredients. Use real food, slide in some super healthy foods whenever and however possible and scale back the unhealthy fats, sugars and processed or refined ingredients. And by indulging in them occasionally, they keep their special treat status not a daily staple.

An absolute favorite summertime dessert! I probably get as much enjoyment making this recipe as I do eating it...watching the ingredients magically transform from green to CHOCOLATE. This decadent treat from funky beginnings is so deLIGHTfully rich that a mere 1/16 slice makes a pleasurable, gratifying serving. Mighty grateful for this nifty creation from Oh She Glows!
Ingredients:
No-Bake Crust
1 1/2 cups walnuts
1/2 cup almonds
1/4 cup of organic raw cacao powder or cocoa powder
2 tablespoons of coconut butter
1/4 cup pure maple syrup
1 teaspoons pure vanilla extract
1/2 teaspoon pure sea salt
No-Bake Filling
2 ripe Hass avocados (not quite 2 cups)
1/3 cup of almond milk
2/3 cup pure maple syrup
1 tablespoon organic peanut butter
1 tablespoon arrowroot powder
1/4 teaspoon pure sea salt
1 teaspoon pure vanilla extract
1/4 cup of organic raw cacao powder or cocoa powder
1 1/4 cups fair trade semi-sweet chocolate chips, melted

Raspberry Coulis
Frozen organic raspberries, slightly thawed
Preparation
Crust:
Line a 9 1/2 inch springform pan with parchment or wax paper.
Add nuts to food processor and pulse until chopped but still a tiny bit chunky. Add the remaining ingredients and pulse until combined. Transfer mixture to prepared pan and evenly flatten "dough" on pan bottom using slightly wet fingers. Place pan in freezer while preparing the filling. No need to wipe or clean food processor bowl because the crust mixture leaves very little residual and what is left complements the filling just fine.
Filling:
Place all ingredients except melted chocolate chips into food processor. Process until super creamy. Add melted chocolate chips and process again until smooth.
Remove crust from freezer and evenly top it with the filling. Smooth out the top and return to freezer for 2-3 hours or until firm.
When ready to serve, remove from freezer and let sit while preparing the coulis (max 5 minutes).
Coulis:
Per slice, per plate: Lightly mash 5-7 slightly thawed raspberries, divided. Smear the bottom of plate with half the mashed raspberries, plate torte slice and top with remaining raspberries.
