When we dropped gluten, we re-discovered the frozen (gluten free) waffle and got creative with a few waffle recipes, schmears and toppings. A waffle makes a super worthy breakfast canvas -- not too filling with good texture that allows for both sweet and savory tastes. They're quick and convenient as breakfasts, snacks, or sides. Pack in some protein and pile them high with healthy toppings and they're good to go on their own. Toast, top and go with a few our favorites below.

1 Frozen Organic Waffle
1 Organic Egg (or 2 egg whites substitute nicely)
Salt & Pepper
Optional Toppings/Drizzles: Olive Oil/Butter, Maple Syrup, Organic Cheese and/or Applegate's (gluten free) Chicken and Apple Breakfast Sausage or local sustainable sausage, bacon or ham (find your local sources here)
Toast waffle nice and crisp. Gently crack and egg into a microwavable cereal/soup bowl (the deep kind, not a shallow bowl). Salt and pepper to taste. Pop egg in the microwave for 20-25 seconds or until desired doneness. Egg slides right out and fits nicely atop waffle. Add optional drizzles/toppings either directly on waffle or atop egg, if desired.

1 Frozen Organic Waffle
1/4 cup Organic Refried Beans (like Amy's Organic) or Plain Hummus, warmed slightly
Olive Oil
Maple Syrup
1 slice Organic Cheese, like Muenster
1-2 slices Sustainably-raised, All-natural Bacon or Ham, like Applegate or Locally Sourced Meat
1 farm fresh and/or organic egg, poached
Toast waffle. Schmear beans on waffle and hit with a very quick, light drizzle of olive oil. Then drizzle with maple syrup. Top with cheese and meat and toast or broil until bubbly. Top with egg -- using an egg poacher yields a uniform egg that can easily be halved laterally for two thin flat egg "slices"-- perfecto! (You could also use the zippy quick method from above.)
